21 Day Fix Approved Chicken Cacciatore

We have been trying to find a healthy way to do all of our favorite meals 21 Day Fix Approved. Every week we have been adding something new into the mix. This week it was 21 Day Fix Approved Chicken Cacciatore and it was delicious. I ate the leftovers for lunch for 2 days!! If you do not want to eat the leftovers that many day in a row then freeze some. It taste even better!

Ingredients

  • 1 tsp olive oil
  • 1 lb boneless skinless chicken breast,  sliced into 1 inch pieces
  • 1 medium onion sliced
  • 2 tsp minced garlic
  • 1 medium red bell pepper, sliced
  • 8 oz sliced mushrooms
  • 1 (15 oz) can crushed tomatoes
  • 2 tsp dried basil
  • black pepper (optional)
  • 2 medium zucchini, sliced
  • 1 medium eggplant, sliced into 1 inch strips
  • fresh parsley (garnish)
  • grated parmesan (optional, garnish)

Preparation

  1. Heat olive oil in a pan over medium heat.
  2. Add the chicken to the pan and cook, stirring it frequently. Do this for 3-4 minutes or until browned.
  3. Add onion, garlic, bell pepper, and mushrooms. Cook this stirring frequently for approximately 5 minutes or until the onion is soft.
  4. Add tomatoes, basil and black pepper. Cook this mixture, stirring occasionally for approximately 6 minutes
  5. Add the zucchini and the eggplant. Cook the mixture stirring occasionally for 5-6 minutes and check to make sure the chicken is cooked through.
  6. Garnish with parsley, parmesan or both if you like!
  7. Serve alone or over whole grain pasta, quinoa or rice.

21 Day Fix/ Core De Force Client Results

21 Day Fix/ Core De Force Client Recognition Time!!  I am so proud of this girl that I just had to share with everyone. This is Jess and she started out in my Bridal Boot camp group back in mid August. As off today she is down 40 pounds!!!! She did this by using 21 Day Fix and Core De Force Beachbody programs combined with Shakeology.

Jess is a prime of example of how Beachbody programs can truly work if you agree to commit and put in the work. That means following not only the exercise program but also the nutrition side of the programs. If you use both of them together you will get to that goal you are after!

It is not only about weight loss it is also about health and happiness. Jess and I have talked about mindset a lot and about being positive. This girl has done a complete 180 not just on weight but also on her attitude. She just radiates confidence and happiness and it shows. She will be walking down the aisle, feeling and looking the best she has ever felt. Who doesn’t want to feel that way?

I am so proud of you Jess and all of the hard work that you have put in. Not only the work but also how inspiring you are to the other ladies in our group as well. Thank you for allowing me to share your success!!

I am back and so excited to share with you my 21 Day Fix results from week 2. Being the second week I was back in the groove of following the program and using the portion control system. I can tell you I love using the containers. It is not for everyone but it is definitely for me! It really helps me to take a step back and look at my portion sizes.

I have to mention this again because it is so important, if you use all the containers you will never be hungry. I was always satisfied with the amount of food for the day. I used to never be a breakfast eater and my breakfast of Shakeology is my favorite meal of the day some days! I mean if you can have chocolate for breakfast you are not going to crave sweets the rest of the day!

What has my day been looking like?

Breakfast: Shake and fruit
Snack: Plain Yogurt or Hard Boiled Egg
Lunch: Leftovers or Salad with Chicken
Snack: Fruit/Nuts or Hummus/Veggies
Dinner: Salmon (any protein), Asparagus (any veggies) and Sweet Potato/Quinoa or Brown Rice
Drink: Water, Water and more Water 🙂

Since it is Week 2 the workouts are not as hard as they were last week, definitely still very challenging though. I am also not as sore as last week, leg day had my quads still burning though! For those of you that are curious about the workouts, there is variety and you do not get bored. For the week you have Cardio, Upper Body, Lower Body, Pilates, Cardio, Mix of Cardio/Weights and then Yoga.

The third week was much more challenging since it also involved a move for us. Not a regular move but a move from New York to Dallas. SO there was some traveling, eating out etc. I will share more about this in my next post with my third and final results from the 21 Day Fix!

21 Day Fix results from week 1!!! I have done the program before and loved it. I lost 15 pounds doing the extreme version after having Emma. I have had a rough few months and decided to re-do 21 Day Fix to re-set my body.

In August we found out that we were pregnant with our second baby. Most of August I spent nauseous and with little energy. I was not consistent with my workouts or with eating clean. This was also how most of September looked too. Then in the 3rd week of September we went for our first Ultra Sound and found out we had a missed miscarriage, the baby had stopped growing but my body still thought it was pregnant.

The last month was filled with physical and emotional complications from the missed miscarriage and then an incomplete miscarriage. Last week I was ready to start trying to get back on track and lose the 15 pounds that I had gained since the beginning of August. I knew that 21 Day Fix was a great place to start!

Since I had been down this road before, I knew what to expect food and exercise wise. The great thing about the 21 Day Fix and also the biggest misconception is that you think you will always be hungry. I never feel hungry on this plan. I always start with breakfast, lunch, snack, dinner and sometimes even an evening snack. That is depending on how late I have dinner.

The most common questions I hear is: “Do I have to finish all of the food?” That is a good sign right?

What about cravings? I used to crave sugar a lot. This has all changed after I started drinking Shakeology. Specifically, vegan chocolate shakeology. I love this stuff. It has been life changing for me. It keeps me satisfied and tricks me into thinking that I had indulged in something bad! I switched to vegan because the regular version was giving me belly bloat.

The weekend is my biggest struggle because we normally like to have some red wine on Friday and Saturday nights. The amazing part is that 21 Day Fix lets you drink wine!!! or the cocktail of your choice. It is all in the program, this is why it is easier to stick to than any other plan I have ever done.

21 Day Better You Bootcamp

I am about to launch an amazing new challenge group!! I have been brainstorming new ideas to help motivate my present and future clients. I had been looking for new ways to provide support, motivation and accountability. There will be new health tips specific to women’s physical and mental health, motivation, recipes and accountability just for you!!

This new group will be kicking off on June 20th, 2016!!

Are you looking for a change in your health and fitness routine? How many times have you started a program but not given it 100% of your self?

I have been there! I have started programs and really wanted to succeed but I did not know how to keep on track. I would workout like crazy then eat all the wrong foods afterwards. I was impatient when I would not see results instantly. Sound familiar? I had no idea that a lot of the time I was undoing all of the hard work that I had put in.

So, then I would get off track of the program, quit and figure that I just was meant to be out of shape and could never get the body I want. It is all genetics right??? hahahah WRONG.

I never really realized that no matter how many hours I put into exercise that nothing was going to out work a bad diet!

Eventually I discovered Beachbody and did the 21 Day Fix Program.  It was only 21 Days right? I did the program with some ladies (now my team members). I figured this was my best option, I was a new mom and did not have the time to hit the gym the way I used to. I was willing to commit and try anything to get my body back after baby.

Here are some of the things that I took away from being in a challenge group using 21 Day Fix, Shakeology and portion control:

  • Nutrition is more important than working out. You need to have both but if your nutrition is not on point, you will not lose the weight. You can spend hours on the treadmill and you will not lose unless you are eating properly.
  • You need to have support. Not matter how you decide to lose weight, you need the support of those around you. The great thing about challenge groups is that even if your family and friends do not support you, the group does. Anything you are experiencing or feeling, I am sure that some one else in the group will be sharing the same feelings or experience.
  • Having a plan and program to follow is one of the biggest keys to success. When the program is laid out for you, there is no guessing. You have a schedule that will tell you what workouts to do on what days. What you should be eating and when etc. Plus the 21 Day Fix comes with amazing containers that will help you to figure out portions. Believe me it works!
  • Drinking Shakeology daily. I have said this many times, Shakeology is one of my secret weapons. It is not a protein shake or an instant weight loss trick. I drank a million protein shakes before Shakeology and none of them did for me what it does. Because I had so many experiences with shakes in the past, I was a skeptic of the price. I gave it a shot as part of the program and I am so glad that I did. I drink mine in the morning and I am not hungry for 3-4 hours after. I stopped craving sweets and it took the pressure off of figuring out what to have for breakfast daily. Plus, it can be made in less than a minute. You can not get that with any meal! Another bonus: it has replaced any and all vitamins that I had taken in the past!
  • Having someone to check in on you and hold you accountable is priceless. I take my job as a coach to my challengers very seriously. It is amazing to have someone who will answer your questions and if I can not answer them I will try my best to find the answer for you. Previously to this I was writing my blog posts and wanting to help people with information but with my beachbody partnership, I actually get to help people and change lives every single day. My challengers are what motivates me everyday to keep going and to help more people!

The 21 Day Better You Bootcamp starts on June 20th and here are the requirements:

You make me your coach by going to my site and creating a free profile which makes me your COACH!

You contact me by messaging me using the message tab on my Facebook Page to be considered for a spot in the group.

You will be doing the 21 Day Fix Program or the 21 Day Fix Extreme. We will chat to decide which one is right for you.

You will be required to replace Shakeology for one of your meals each day for the very best results.  My goal is to teach you how to plan the other meals of the day so that you get the results you have always wanted.  At the end of the 21 days the choice is yours to continue with Shakeology. There will be no pressure in that 🙂

You must engage daily to the private Facebook group to share with us about your day, be accountable and participate in the group discussion at least once each day.

Plus… You get to workout in your own home but be connected to me 24/7 for support, fitness, recipes, nutrition and tips. Facebook is awesome for connecting via messages daily!
