Sheet Pan Roasted Garlic Shrimp with Zucchini

Sheet Pan Roasted Garlic Shrimp with Zucchini

Roasted garlic shrimp makes for an easy sheet pan dinner. Perfect for weekday meals!

Prep Time: 15 minutes
Cook Time: 18 minutes
Total Time: 33 minutes
Servings: 4 servings

Ingredients:
– Parchment paper
– 1 Tbsp. olive oil plus 1 tsp.
– 4 cloves garlic finely chopped
– 1/2 tsp. dried basil
– 1/4 tsp. sea salt or Himalayan salt
– 1/4 tsp. ground black pepper
– 4 medium zucchini cut into 1/2-inch slices
– 1 lb. medium shrimp peeled, deveined
– 1/2 cup grated Parmesan cheese
– 1 Tbsp. fresh lemon juice
– 2 Tbsp. finely chopped fresh parsley

Preparation:
1) Preheat oven to 400º F.
2) Line large sheet pan with parchment paper. Set aside.
3) Combine oil, garlic, oregano, basil, salt, and pepper in a small bowl; whisk to blend. Set aside.
4) Place zucchini on pan. Drizzle with half of oil mixture; mix well to coat. Bake for 10 minutes.
5) Add shrimp to pan; mix well.
6) Drizzle with remaining half of oil mixture; mix well. Sprinkle with cheese. Bake for 6 to 8 minutes, or until shrimp is firm and opaque, and zucchini is tender-crisp.
7) Drizzle with lemon juice and parsley; serve immediately.

Clean Eating Shrimp Burrito Bowls

Shrimp burrito bowls is one of our favorite meals in our house. This week we had some shrimp that we wanted to use and why not make them into shrimp burrito bowls, clean eating style. If you are like me, I love Chipotle but do not love all of the additional calories from cheese, sour cream etc. I try not to go crazy with the high calorie toppings and keep it kind of simple. The thing about shrimp burrito bowls that is awesome, is that they are quick and easy to make. I chose to make mine without rice and keep them pretty low carb. You can add rice or quinoa if you like. Here is the recipe we use:

Clean Eating Shrimp Burrito Bowls

Ingredients

  • 1 lime, juiced
  • 1 can 15oz black beans
  • 1 tsp oregano
  • 1 onion sliced
  • 5 scallions, trimmed and sliced to 1 inch bits
  • 1 pound peeled shrimp (we used fresh but frozen is fine)
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 avocado
  • 1/2 pint of cherry tomatoes, halved
  • salt and pepper
  • cilantro for garnish (optional)

Preparation

  1. Mash half of the beans with 1/2 cup of water, in a small saucepan over medium heat. Add the rest of the beans and the oregano. Let the beans simmer for approximately 8 minutes. Season with salt and pepper, turn the heat off and cover to keep warm.
  2. Pre-heat a grill pan or a regular large pan, over medium heat. In a large bowl toss onion, scallions, shrimp and olive oil, and chili powder. Season with salt and pepper. Grill or saute the onions and scallion whites for approximately 7 minutes. Then add the scallion greens and shrimp for approximately 4 minutes turning the shrimp at least once. Transfer to a plate.
  3. In a small bowl, mash the avocado, with the remaining lime juice. Add beans to your serving bowls, top with veggies, tomatoes, shrimp and then add the mashed avocado on top. ENJOY!
