Slow Cooker Clean Eating Vegetable and Chickpea Curry

Another yummy Meatless Monday has come and gone. I found this recipe on my recipes website but I tweaked it quite a bit for our tastes. We like things with a little more kick aka more flavor!! Try this one out and you will not miss the meat. We have been trying to eat less meat for our health and our food budget!

Ingredients

1 tablespoon olive oil
1 1/2 cups chopped onion
1 cup (1/4-inch-thick) slices carrot
2-3 tablespoons curry powder (we like lots!!!)
1 tablespoon grated peeled fresh ginger
3 garlic cloves, minced
1 serrano chile, seeded and minced
2 cups cooked chickpeas (garbanzo beans)
2 cups cubed sweet potato
1 cup diced green bell pepper
1 cup (1-inch) cut green beans
1 teaspoon salt
1 teaspoon black pepper
1/8 teaspoon ground red pepper
1 (14.5-ounce) can diced tomatoes, undrained
1 (14-ounce) can vegetable broth
3-4 cups fresh baby spinach
1 cup light coconut milk
lemon wedges

How to Make It

Heat oil in a large nonstick skillet over medium heat. Add onion and carrot; cover and cook 5 minutes or until tender. Add curry powder, ginger, garlic, and chile; cook 1 minute, stirring constantly.
Place onion mixture in a 5-quart slow cooker. Stir in chickpeas and next 8 ingredients (through broth). Cover and cook on HIGH 5-6 hours or until vegetables are tender. Add spinach and coconut milk; stir until spinach wilts. Serve with lemon wedges. Do not forget the lemon because believe me it makes it even better!!!

We served it over quinoa, you could also do brown rice or even by itself. It is such a hearty meal that you will not miss the meat. But if you want to add something I would do some chicken or shrimp in this recipe. If you give it a try and please let me know how you like it!

Leftover Carnitas Salad

Leftover Carnitas Salad, yes I said leftovers hahahaha. Maybe you never have leftover carnitas but since we are a small family we always have leftover carnitas. I am always looking for ways to use them up besides just my regular tacos or burrito bowls. We love to cook our carnitas in the slow cooker. Check out the recipe here: Clean Eating Slow Cooker Carnitas. The slow cooker carnitas recipe is probably the most popular when I run my Slow Cooker Groups. People love it and so do we!!

Ingredients for Salad:

  • Leftover Carnitas
  • 1 cup of frozen corn
  • 1/2 a yellow bell pepper, deseeded and sliced
  • 1/2 a red bell pepper, deseeded and sliced
  • 1 poblano pepper, deseeded and sliced
  • 4-5 cups of romaine lettuce
  • 1 avocado sliced
  • Cilantro to garnish
  • lime wedges to garnish

Ingredients for Dressing:

  • 1/4 of olive oil
  • juice of 2 limes
  • 2 tsps of minced garlic
  • 1 tsp honey
  • 1 tbsp of adobo
  • 1/3 cup of chopped cilantro
  • 1 tsp ground cumin
  • 2 tbsp of plain greek yogurt

Preparation

  1. Warm up your left over carnitas under the broiler to crisp them up.
  2. Put frozen corn in a pan and cook until toasted. A little char on it or burn as I like to call it.
  3. While toasting the corn put all dressing ingredients in a food processor or blender and blend.
  4. Combine all ingredients in a large salad bowl and top with dressing. Toss your salad and serve. Enjoy!!

We had this last night and my hubby loved it!! We will definitely be doing this salad again. If you need something a little more hearty or CARBS…. add some quinoa or brown rice to ice. Or why not eat some tortillas or make this salad into a tostada! Sounds yummy right?

21 Day Fix Approved Cheesy Chicken Enchiladas

Tasty Tuesday Recipe Feature!! Since we moved to Dallas, Texas we have been OBSESSED with Tex-Mex and Mexican food in general. This is a healthier version of one of my favorites Chicken Enchiladas!!! The best part is that it is 21 Day Fix Approved!!

21 Day Fix Approved Slow Cooker Cheesy Chicken Enchiladas

Total Time: 3 hrs. 28 min.
Prep Time: 15 min.
Cooking Time: 3 hrs. 13 min.
Yield: 10 servings, about 1 cup each
Ingredients:
1 tsp. olive oil
1 medium onion, chopped
2 cloves garlic, finely chopped
2 medium jalapenos, seeded and deveined, finely chopped
1 lb. raw ground chicken breast
1½ cups dry farro, rinsed
1 (15-oz.) can black beans, rinsed, drained
1 cup frozen corn
1 (15-oz.) can diced fire roasted tomatoes (or diced tomatoes), no salt added
1 cup water
1 (10-oz.) can red enchilada sauce
2 Tbsp. chili powder
1 Tbsp. ground cumin
2 tsp. ground coriander
Sea salt (or Himalayan salt) and ground black pepper (to taste; optional)
1 cup shredded jack (or cheddar or Mexican blend) cheese
3 medium green onions, chopped
¼ cup finely chopped fresh cilantro
Preparation:
1. Heat oil in medium nonstick skillet over medium-high heat.
2. Add onion; cook, stirring frequently, for 3 to 5 minutes, or until onion is soft.
3. Add garlic and jalapenos; cook, stirring frequently, for 1 to 2 minutes, or until jalapenos are soft.
4. Add chicken; cook, stirring frequently, for 5 to 6 minutes, or until chicken is cooked through.
5. Place chicken mixture, farro, beans, corn, tomatoes, water, enchilada sauce, chili powder, cumin, and coriander in a 3-quart slow cooker; mix well and cover. Cook on high for 3 hours, or until liquid has been absorbed, and farro is tender.
6. Remove lid and stir mixture. Season with salt and pepper if desired. Add cheese; mix well. Cover until cheese has melted.
7. Top with green onions and cilantro; serve.

Serving Size 1 Cup in Containers Equals: 1 green container, 1/2 red container, 2 yellow containers and  1/2 blue container

Slow Cooker Chicken Chili

Slow Cooker chicken chili

Slow cooker chicken chili is something I came up with when I had extra chicken to cook. Winter is pretty much done here in the East but I still am continuing to create slow cooker recipes. This may slow down come spring/summer. I do love my slow cooker though! I do not do mine with chili peppers because I need this meal to be toddler friendly. If you are not cooking with kids in mind, spice it up!

Ingredients

  • 1 pound of boneless skinless chicken breasts
  • 1 can of garbanzo beans
  • 1 28 oz crushed tomatoes
  • 1 can of kidney beans
  • 1 tbsp cumin
  • 1 tbsp oregano
  • 4 garlic cloves, chopped
  • chili peppers (optional)
  • salt and pepper to taste

Preparation

  1. Put chicken boneless skinless chicken breasts in the slow cooker.
  2. Chop garlic cloves. You can do this minced or more coarsely chopped. I like to keep my garlic a little chunkier!
  3. Add all other ingredients.
  4. Set on High for 4 hours or low for 6 hours.
  5. Open slow cooker taste and add salt and pepper to your liking.
  6. Shred chicken or cut chicken.
  7. Serve hot and enjoy!

It is that easy and that is what I love about meals that I make in the slow cooker. Anything that I can just throw everything in the slow cooker turn it on and go about my business for the day. I had chicken breasts that I was wanting to get rid of but you can also do this with chicken thighs or ground chicken as well. If you are looking to do a different take on chili, give this slow cooker chicken chili a try. I like to top it with cilantro, avocado or even a little plain greek yogurt, especially if I have done a spicier version.

Slow Cooker Pot Roast

I love this slow cooker pot roast recipe, it is so easy to make. One of my favorite things about fall/winter is the comfort foods that go with it. Pot roast definitely brings back those warm and fuzzy feelings of Sunday dinners with my family.

Lately we have been obsessed with trying to cook most of our meals in the slow cooker. I figured why not try to make a slow cooker pot roast. Evenings can get kind of crazy and I like to have dinner ready and out-of-the-way. Check out how easy this is.

Ingredients

  • 2 lbs of Beef Chuck Roast
  • 2 carrots, peeled and coarsely chopped
  • 1 onion, peeled and coarsely chopped
  • 2 parsnips, peeled and chopped
  • 2 bay leaves
  • salt and pepper to season
  • beef broth (low sodium)

Preparation

  1. Chop all the vegetables and put in the slow cooker.
  2. Add the beef.
  3. Season with salt and pepper.
  4. Pour in beef stock so that it completely covers the roast.
  5. Turn on slow cooker for 8 hours on low.
  6. Leave it alone and go about your day.
  7. Come home. Open slow cooker.
  8. Serve!

This is seriously one of the easiest meals that I have ever made. Throw it all in the pot, turn it on and that is it. We served it up with a 1/4 of a sweet potato. It turned out delicious and I am sure will go into our dinner rotation! Picky Eaters Marinara Sauce

Picky eaters. All parents have experienced a picky eater in their lives. Almost all kids go through a stage of not liking certain things. Our girl has decided she only like the carrots that are in the mixed frozen vegetables. She does not eat the other vegetables but they have to all be together on the plate so she can pick them out and eat them. if I just give her the carrots she thrown them on the floor. It gets better… It has to be the brand where the carrots are circles. If they are not circles and are cubes or rectangles, they will also be thrown on the floor.

This would be my kid that used to eat absolutely anything put in front of her. What now? How will I get her to eat vegetables until she is an age of reason. I have decided to sneak them into other recipes and just be happy she is eating veggies and has no clue. This is why I made the Picky Eaters Marinara Sauce. It is kid tested and approved!

Ingredients

  • 2 Carrots, diced
  • 1 large onion, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, chopped
  • 2 (16 oz) can of crushed tomatoes
  • 1 tbsp of agave or honey
  • 2 tbsp of basil (fresh or dried)
  • 1 (6oz) can of tomato paste
  • salt and pepper to taste

Preparation

  1. Chop carrots, onion, celery and garlic. Place in the bottom of slow cooker or large sauce pot.
  2. Add the rest of the ingredients.
  3. Set slow cooker on high for 2 hours or simmer on stove top.
  4. Taste and add salt and pepper to your liking.
  5. Pour sauce into blender or food processor.
  6. Puree sauce and add back into the pot or slow cooker.
  7. Simmer for another 30 minutes.

We had this sauce last night with meatballs and gluten free pasta. I am still experimenting with being on a gluten free diet 5 days a week for my Ulcerative Colitis. The sauce was a huge success and we all loved it so much that we may just have it again tonight. Give it a try and let me know what you and your picky eaters think!

Hey guys!! I posted the other night on my Instagram about our yummy dinner that we had and a lot of you asked me for the recipe. I am happy to be able to share this with you and the best part it is super easy. I love slow cooker recipes because once I set it up that is all I need to do for dinner that day. The other amazing part is that I usually have enough leftovers to have this dinner for two nights!

Slow Cooker Carnitas

Ingredients

  • 2 lbs pork shoulder
  • 1 can of low sodium chicken broth (16 ounces)
  • 3-4 garlic cloves, chopped
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 large onion, roughly chopped
  • 1 cup of natural orange juice
  • 1/4 bunch of cilantro

Preparation

  1. Add onion to the bottom of the slow cooker.
  2. Place pork on top of the onion.
  3. Add all other ingredients.
  4. Set on LOW for 8 hours.
  5. Once done shred pork. At this point it will be falling apart 🙂
  6. This part is optional. Spread the pork on a pan and place under the broiler in your oven for a few minutes to crisp it up. It turns out amazing 🙂

It is that easy! This is a great meal to have on a whole wheat tortilla or as I like to have it over some quinoa and topped with salsa, guacamole and cilantro. It is a family favorite around our house. The other great thing is that it fits in with my 21 Day Fix food plan. Yes, food this good can be eaten in my 21 Day Fix challenge group!  (use the guide on how to use your containers or ask me for clarification on this recipe).
